AVPN rules: per litre of water 1,600–1,800 g flour, 40–60 g salt, 0.1–3 g fresh yeast; balls 200–280 g; no oil or sugar. Source: AVPN international regulations (2024). Fresh yeast is three times the instant weight and active dry about 1.2 times (King Arthur: instant = fresh × 0.33, active dry = fresh × 0.4; source).

Method

  1. Dissolve the salt in the water, add about a tenth of the flour and the yeast, then the rest of the flour.
  2. Knead until smooth.
  3. Ferment: the AVPN rules allow 12–24 hours in total; divide into 250 g balls after the first rise.
  4. Shape and stretch, top and bake as hot as your oven allows.

FAQ

Dough for 10 Neapolitan pizzas

About 1547 g of flour, with 959 g of water (62% hydration), for 10 dough balls of 250 g plus 2% for dough left in the bowl.

About 0.77 g of instant yeast (0.05% of the flour), 0.93 g of active dry, or 2.32 g of fresh yeast. Less yeast and a longer, cooler ferment give more flavour; adjust for your kitchen.

Dough balls of 250 g make about 30 cm (12 in) pizzas. Change the ball weight in the calculator for larger or thinner pizzas.
