Thick, focaccia-like crust baked in an oiled pan. Fresh yeast is three times the instant weight and active dry about 1.2 times (King Arthur: instant = fresh × 0.33, active dry = fresh × 0.4; source).

Method

  1. Dissolve the salt in the water, add about a tenth of the flour and the yeast, then the rest of the flour and the oil.
  2. Knead until smooth — at 68% hydration the dough is sticky; use wet hands or stretch-and-folds.
  3. Ferment: a few hours at room temperature, or 24–72 hours in the fridge for more flavour.
  4. Press into an oiled pan, top and bake as hot as your oven allows.

About 588 g of flour, with 400 g of water (68% hydration), for 2 dough balls of 500 g plus 2% for dough left in the bowl.

About 3.53 g of instant yeast (0.6% of the flour), 4.23 g of active dry, or 10.58 g of fresh yeast. Less yeast and a longer, cooler ferment give more flavour; adjust for your kitchen.

Dough balls of 500 g make a quarter-sheet or 12 in round pan pizzas. Change the ball weight in the calculator for larger or thinner pizzas.
